 This is my all time favorite it was my Granny's recipe.
1-2lbs boneless chicken ( strips work best)
Buttermilk
Garlic powder
Salt and Pepper ( A little ground cayenne for kick also if you prefer)
Flour
Place the chicken in a tupperware type container and cover with Buttermilk add Garlic powder to your taste and mix around place in the fridge for 2hrs covered. Put 2-3 cups of Flour along with salt,pepper and a little more garlic powder in a gallon freezer bag. Once the chicken has marinated take 2-3 pcs. at a time and place in the flour mixture and coat well. Place in a deep fryer that has been heated to 350 degrees for 4 min. if it's strips. And enjoy southern comfort food at its best. This goes great with fresh green beans and mashed potatoes.

Take 2 tablespoons of your favourite curry paste mix with 2 tablespoons of oil and 1 teaspoon of lemongrass and 2 tablespoons from a 400g can of coconut milk. Paint over you chicken then put into a roasting tin and pour over the rest of the can of coconut milk. Roast as usual basting occasionally.
